- 1 Scotch bonnet pepper, chopped
- 2 carrots, sliced
- 1 can (15 oz) butter beans, drained
- 2 tbsp tomato paste
- 2 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 4 cups beef broth
- 1 tsp pimento (allspice) seeds
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp cooking oil
- 1 cup water
Instructions
- Prepare the Oxtail: Rinse and pat dry the oxtail pieces. Season with all-purpose seasoning, salt, and black pepper. Marinate for at least 1 hour or overnight.
- Sear the Oxtail: Heat cooking oil in a large pot over medium-high heat. Sear the oxtail until browned on all sides.
- Sauté Aromatics: Add onion, garlic, green onions, and thyme. Sauté for 3 minutes until fragrant.
- Add Seasonings and Liquids: Stir in tomato paste, soy sauce, Worcestershire sauce, pimento seeds, and Scotch bonnet pepper. Pour in beef broth and water to cover oxtail.
- Slow Cook: Reduce heat to low, cover, and simmer for 2.5 to 3 hours, stirring occasionally, until the oxtail is tender.
- Incorporate Vegetables: Add carrots and butter beans in the last 30 minutes of cooking.
- Thicken Gravy: Allow sauce to reduce slightly or mash some butter beans to thicken.
- Serve and Enjoy: Once oxtail is fork-tender, serve hot with rice and peas or your favorite side.

- For a spicier version, add more Scotch bonnet pepper or hot sauce.
- To thicken the gravy further, mix 1 tsp cornstarch with water and add in the last 10 minutes.
