- 4 medium potatoes
- 1 small red onion, thinly sliced
- 3 green onions, chopped
- ¼ cup fresh parsley, finely chopped
- ¼ cup fresh dill, finely chopped
- 2 tbsp lemon juice
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar or red wine vinegar
- 1 tsp sumac
- ½ tsp red pepper flakes (adjust to taste)
- ½ tsp salt (or to taste)
- ½ tsp black pepper
Instructions
- Prepare the Potatoes: Wash and peel the potatoes, then cut them into medium-sized chunks. Boil them in a large pot of salted water until they are fork-tender but not mushy. Drain and let them cool slightly.
- Chop the Vegetables and Herbs: Thinly slice the red onion and green onions. Finely chop the parsley and dill. Set them aside.
- Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, vinegar, sumac, red pepper flakes, salt, and black pepper until well combined.
- Assemble the Salad: In a large mixing bowl, combine the warm potatoes with the chopped onions, parsley, and dill. Pour the dressing over the salad and gently toss everything together to ensure even coating.
- Let It Marinate: Allow the salad to rest for at least 15-20 minutes before serving so the flavors can meld together beautifully.
- Serve: Garnish with additional fresh herbs and a sprinkle of sumac before serving. Enjoy at room temperature or slightly chilled.
