- 2 tsp baking powder
- 1/4 cup granulated sugar

- 1 tsp vanilla extract
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 1/2 cups diced apples (such as Granny Smith or Honeycrisp)
- 1 cup powdered sugar
- 1 tbsp lemon juice
- 1–2 tbsp water
Instructions
- Preheat Oven – Set your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.
- Prepare the Apples – Peel, core, and dice apples into small chunks. Set aside.
- Mix Dry Ingredients – In a large bowl, whisk together the flour, baking powder, granulated sugar, brown sugar, cinnamon, nutmeg, and salt.
- Combine Wet Ingredients – In another bowl, beat the eggs, then add vanilla extract, milk, and melted butter. Stir until well combined.
- Form the Batter – Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the diced apples.
- Scoop Onto Baking Sheet – Using a spoon or cookie scoop, drop mounds of batter onto the prepared baking sheet, spacing them a few inches apart.
- Bake – Place in the oven and bake for 15-18 minutes, or until the fritters are golden brown and set in the middle.
- Prepare the Glaze – In a small bowl, whisk together powdered sugar, lemon juice, and a little water until a smooth, pourable glaze forms.
- Glaze the Fritters – Once the fritters have cooled slightly, drizzle the glaze over the top. Let it set before serving.
