  • 1 picnic ham (pork shoulder)
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 3 garlic cloves, minced
  • 1 small onion, sliced
  • 6 whole cloves
  • 1 tsp ground black pepper
  • 1 tsp smoked paprika
  • 1/2 cup water or broth
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 325°F (163°C) and position a roasting rack inside a large baking dish.
  2. Prepare the ham by rinsing it under cold water and patting it dry with paper towels. Score the surface in a diamond pattern.
  3. Season the ham by rubbing it with olive oil and sprinkling black pepper and smoked paprika over it. Place the ham on the roasting rack.
  4. Make the glaze by combining brown sugar, honey, Dijon mustard, apple cider vinegar, minced garlic, and water or broth in a saucepan. Simmer until slightly thickened.
  5. Apply the glaze by brushing half of it over the ham, ensuring even coverage.
  6. Roast the ham covered loosely with aluminum foil for approximately 18-20 minutes per pound.
  7. Baste regularly by removing the foil and brushing more glaze over the ham every 30-40 minutes.
  8. Caramelize the glaze by removing the foil completely in the last 30 minutes and basting one final time.
  9. Rest before serving by letting the ham sit for 15-20 minutes after removing it from the oven.
