- 1 picnic ham (pork shoulder)
- 1/2 cup brown sugar
- 1/4 cup honey
- 2 tbsp Dijon mustard
- 2 tbsp apple cider vinegar
- 3 garlic cloves, minced
- 1 small onion, sliced
- 6 whole cloves
- 1 tsp ground black pepper
- 1 tsp smoked paprika
- 1/2 cup water or broth
- 1 tbsp olive oil
Instructions
- Preheat the oven to 325°F (163°C) and position a roasting rack inside a large baking dish.
- Prepare the ham by rinsing it under cold water and patting it dry with paper towels. Score the surface in a diamond pattern.
- Season the ham by rubbing it with olive oil and sprinkling black pepper and smoked paprika over it. Place the ham on the roasting rack.
- Make the glaze by combining brown sugar, honey, Dijon mustard, apple cider vinegar, minced garlic, and water or broth in a saucepan. Simmer until slightly thickened.
- Apply the glaze by brushing half of it over the ham, ensuring even coverage.
- Roast the ham covered loosely with aluminum foil for approximately 18-20 minutes per pound.
- Baste regularly by removing the foil and brushing more glaze over the ham every 30-40 minutes.
- Caramelize the glaze by removing the foil completely in the last 30 minutes and basting one final time.
- Rest before serving by letting the ham sit for 15-20 minutes after removing it from the oven.
