For the Avocado Sauce:

  • 2 ripe avocados
  • 1/4 cup Greek yogurt
  • 2 tbsp lime juice
  • 1 clove garlic, minced
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Water (as needed for consistency)

Instructions

Preparing the Salmon Meatballs:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Finely chop or pulse salmon fillets in a food processor until coarsely ground.
  3. In a large bowl, mix salmon, garlic, onion, egg, breadcrumbs, Parmesan, lemon zest, Dijon mustard, dill, salt, and black pepper.
  4. Shape mixture into small meatballs (about 1 tbsp each) and place on the baking sheet.
  5. Lightly brush or drizzle olive oil over the meatballs.
  6. Bake for 15-18 minutes, or until golden brown and cooked through.

Preparing the Avocado Sauce:

  1. Blend avocados, Greek yogurt, lime juice, garlic, cilantro, olive oil, salt, and black pepper in a food processor until smooth.
  2. Add water as needed to adjust consistency.
  3. Taste and adjust seasoning if necessary.
