For the Salmon Meatballs:
- 1 lb fresh salmon fillets, skin removed
- 2 cloves garlic, minced
- 1/4 cup onion, finely chopped
- 1 large egg
- 1/2 cup panko breadcrumbs

- 1 tsp lemon zest
- 1 tsp Dijon mustard
- 2 tbsp fresh dill, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
For the Avocado Sauce:
- 2 ripe avocados
- 1/4 cup Greek yogurt
- 2 tbsp lime juice
- 1 clove garlic, minced
- 2 tbsp fresh cilantro, chopped
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- Water (as needed for consistency)
Instructions
Preparing the Salmon Meatballs:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Finely chop or pulse salmon fillets in a food processor until coarsely ground.
- In a large bowl, mix salmon, garlic, onion, egg, breadcrumbs, Parmesan, lemon zest, Dijon mustard, dill, salt, and black pepper.
- Shape mixture into small meatballs (about 1 tbsp each) and place on the baking sheet.
- Lightly brush or drizzle olive oil over the meatballs.
- Bake for 15-18 minutes, or until golden brown and cooked through.
Preparing the Avocado Sauce:
- Blend avocados, Greek yogurt, lime juice, garlic, cilantro, olive oil, salt, and black pepper in a food processor until smooth.
- Add water as needed to adjust consistency.
- Taste and adjust seasoning if necessary.

- Spicy: Add red pepper flakes or hot sauce to the salmon mixture.
- Gluten-Free: Use gluten-free breadcrumbs.
- Dairy-Free: Omit Parmesan and substitute dairy-free yogurt in the sauce.
