  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the prawns: Rinse the prawns under cold water and pat dry with paper towels. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Make the marinade: In a bowl, whisk together olive oil, garlic, chilli, lemon juice, lemon zest, salt, black pepper, and paprika.
  3. Marinate the prawns: Add prawns to the bowl and toss to coat evenly. Let marinate for 20-30 minutes.
  4. Preheat the grill: Heat a barbecue grill or stovetop grill pan to medium-high heat. Lightly brush with oil if using a pan.
  5. Skewer the prawns (if using): Thread the prawns onto skewers, ensuring they lie flat for even cooking.
  6. Grill the prawns: Place prawns on the grill and cook for 2-3 minutes per side, until pink and opaque with slight charring.
  7. Garnish and serve: Remove from the grill, sprinkle with fresh parsley, and serve immediately with lemon wedges.
