  • 2 tbsp olive oil
  • 2 bay leaves
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Prepare Ingredients: Rinse the lentils under cold water. Chop onion, carrots, and celery. Mince garlic.
  2. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5 minutes until softened. Stir in garlic and cook for another minute.
  3. Add Seasonings: Stir in cumin, coriander, paprika, salt, and black pepper. Cook for another minute to enhance flavors.
  4. Add Lentils & Broth: Pour in lentils, diced tomatoes, bay leaves, and vegetable broth. Stir and bring to a gentle boil.
  5. Simmer: Reduce heat to low, cover, and simmer for 30-35 minutes until lentils are tender.
  6. Finish & Serve: Remove bay leaves, stir in lemon juice and parsley. Serve warm with crusty bread or rice
