Description

This easy Black Bean Enchilada Casserole is a hearty, cheesy, and flavorful vegetarian dish. Layered with black beans, tortillas, enchilada sauce, and cheese, it’s perfect for weeknight dinners or meal prep.

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 10 small corn tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (4 oz) green chilies, drained
  • 1 bell pepper, diced
  • 1 cup corn (fresh, frozen, or canned)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • ¼ cup fresh cilantro, chopped
  • 1 tbsp lime juice
  • Salt and pepper, to taste

Instructions

  • Preheat the Oven

    • Set oven to 375°F (190°C). Lightly grease a baking dish.
  • Prepare the Filling

    • Heat olive oil in a skillet over medium heat.
    • Sauté onions, garlic, and bell peppers until softened.
    • Stir in black beans, corn, green chilies, cumin, chili powder, salt, and pepper.
    • Cook for 5 minutes, then remove from heat.
  • Layer the Casserole

    • Spread a small amount of enchilada sauce on the bottom of the baking dish.
    • Layer tortillas, followed by a portion of the black bean mixture, a drizzle of enchilada sauce, and shredded cheese.
    • Repeat layers, finishing with cheese on top.
  • Bake

    • Cover with foil and bake for 20 minutes.
    • Remove foil and bake for another 10 minutes, until the cheese is melted and bubbly.
  • Garnish & Serve

    • Let casserole rest for 5 minutes before serving.
    • Garnish with fresh cilantro and a squeeze of lime juice.
