This easy Black Bean Enchilada Casserole is a hearty, cheesy, and flavorful vegetarian dish. Layered with black beans, tortillas, enchilada sauce, and cheese, it’s perfect for weeknight dinners or meal prep.

- 2 cans (15 oz each) black beans, drained and rinsed
- 10 small corn tortillas
- 2 cups enchilada sauce
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (4 oz) green chilies, drained
- 1 bell pepper, diced
- 1 cup corn (fresh, frozen, or canned)
- 1 tsp cumin
- 1 tsp chili powder
- 1 tbsp olive oil
- ¼ cup fresh cilantro, chopped
- 1 tbsp lime juice
- Salt and pepper, to taste
Instructions

Preheat the Oven
- Set oven to 375°F (190°C). Lightly grease a baking dish.

Prepare the Filling
- Heat olive oil in a skillet over medium heat.
- Sauté onions, garlic, and bell peppers until softened.
- Stir in black beans, corn, green chilies, cumin, chili powder, salt, and pepper.
- Cook for 5 minutes, then remove from heat.

Layer the Casserole
- Spread a small amount of enchilada sauce on the bottom of the baking dish.
- Layer tortillas, followed by a portion of the black bean mixture, a drizzle of enchilada sauce, and shredded cheese.
- Repeat layers, finishing with cheese on top.

Bake
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for another 10 minutes, until the cheese is melted and bubbly.

Garnish & Serve
- Let casserole rest for 5 minutes before serving.
- Garnish with fresh cilantro and a squeeze of lime juice.
