  • 2 sheets puff pastry, thawed
  • 2 cups fresh blackberries
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp cornstarch
  • 1/2 tsp vanilla extract
  • 1 egg + 1 tbsp water (for egg wash)

Instructions

 

  1. Prepare the filling: In a saucepan, combine blackberries, sugar, lemon juice, lemon zest, and cornstarch. Cook over medium heat, stirring, until thickened. Let cool completely.
  2. Roll out pastry: Roll out puff pastry sheets into rectangles, about 1/8-inch thick, on a floured surface.
  3. Spread filling: Spread cooled blackberry filling over one sheet, leaving a small border.
  4. Top and seal: Place the second puff pastry sheet over the filling, aligning edges. Press gently to seal.
  5. Cut and twist: Slice the pastry into 1-inch-wide strips. Twist each strip carefully.
  6. Chill: Place the twists on a parchment-lined baking sheet. Chill for 15 minutes.
  7. Egg wash: Brush twists with egg wash for a golden finish.
  8. Bake: Preheat oven to 375°F (190°C). Bake twists for 20-25 minutes, or until golden brown.
  9. Cool and serve: Let cool on a wire rack. Serve warm or at room temperature.
