Description

Cajun Seafood Bisque with Corn is a rich and creamy soup featuring shrimp, crab, and a blend of bold Cajun spices. This comforting dish is packed with flavor, perfect for seafood lovers and special occasions.

Ingredients

Scale
  • 4 tbsp butter
  • 1 small onion, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 3 tbsp flour
  • 4 cups chicken or seafood broth
  • 1 cup heavy cream
  • 1 lb shrimp, peeled and deveined
  • 8 oz crab meat
  • 1 cup corn (fresh, canned, or frozen)
  • 2 tbsp tomato paste
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 bay leaf
  • ½ tsp white pepper
  • 1 tsp hot sauce (adjust to taste)
  • 1 tsp Worcestershire sauce
  • 2 green onions, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt to taste

Instructions

  • Prepare the Base – In a large pot, melt butter over medium heat. Add onion, celery, and garlic, sautéing until soft and fragrant.
  • Make the Roux – Sprinkle flour over the vegetables, stirring constantly. Cook for a few minutes until the flour turns light golden.
  • Build the Flavor – Stir in tomato paste, Cajun seasoning, paprika, thyme, and bay leaf. Mix well to coat the vegetables.
  • Add Liquid Ingredients – Gradually pour in the broth, stirring constantly to prevent lumps. Bring to a gentle simmer.
  • Incorporate Cream – Reduce the heat and slowly stir in the heavy cream, allowing the bisque to thicken.
  • Cook the Seafood – Add shrimp and crab meat, cooking until the shrimp turns pink and opaque.
  • Add Corn and Seasonings – Stir in corn, Worcestershire sauce, hot sauce, white pepper, and salt. Simmer for a few minutes.
  • Final Touches – Remove the bay leaf, then stir in green onions and fresh parsley.
  • Serve and Enjoy – Ladle the bisque into bowls and serve hot, garnished with extra green onions or a sprinkle of Cajun seasoning.

Notes

  • Spicier Version – Add extra hot sauce or cayenne pepper for more heat.
  • Creamier Texture – Blend part of the bisque before adding seafood for a smoother consistency.
  • Lighter Option – Use half-and-half instead of heavy cream.
  • Alternative Seafood – Try lobster, scallops, or white fish for variation.
  • Vegetable Addition – Bell peppers or diced potatoes add heartiness.
