Description

A rich and flavorful Caribbean Brown Stew Salmon recipe featuring salmon simmered in a spiced brown stew sauce with fresh vegetables and aromatic seasonings. Perfect for a comforting and delicious meal.

Ingredients

  • Fresh salmon fillets
  • Lime or lemon juice
  • Onion
  • Garlic
  • Bell peppers
  • Tomatoes
  • Carrots
  • Green onions
  • Scotch bonnet pepper (optional for heat)
  • Thyme
  • Allspice (pimento)
  • Brown sugar
  • Soy sauce
  • Worcestershire sauce
  • Tomato paste
  • Fish or vegetable broth
  • Cooking oil
  • Salt and pepper

Instructions

  1. Prepare the Salmon: Rinse the salmon fillets with lime or lemon juice and pat them dry with a paper towel. Season them with salt, pepper, allspice, and thyme.
  2. Sear the Salmon: Heat oil in a large skillet over medium heat. Sear the salmon fillets for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
  3. Caramelize the Sugar: In the same skillet, add a little more oil and sprinkle in the brown sugar. Let it caramelize until it turns a deep golden brown.
  4. Sauté the Aromatics: Add chopped onions, garlic, bell peppers, carrots, and scotch bonnet pepper. Cook until softened.
  5. Build the Sauce: Stir in tomato paste, soy sauce, Worcestershire sauce, and diced tomatoes. Pour in the broth and bring the mixture to a simmer.
  6. Simmer the Stew: Return the salmon fillets to the skillet, spooning the sauce over them. Cover and let it simmer for 10-15 minutes, allowing the flavors to meld together.
  7. Final Touches: Adjust seasoning with salt and pepper, garnish with green onions, and serve hot with your preferred side.

Notes

  • Spice Level: Adjust the heat by increasing or decreasing the amount of scotch bonnet pepper.
  • Protein Swap: Try this recipe with snapper, tilapia, or even tofu for a vegetarian version.
  • Coconut Twist: Add coconut milk to the sauce for a creamy and slightly sweet variation.
  • Extra Veggies: Include okra, potatoes, or green beans for added texture and nutrients.
