Instructions
- Prepare the Salmon: Rinse the salmon fillets with lime or lemon juice and pat them dry with a paper towel. Season them with salt, pepper, allspice, and thyme.
- Sear the Salmon: Heat oil in a large skillet over medium heat. Sear the salmon fillets for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
- Caramelize the Sugar: In the same skillet, add a little more oil and sprinkle in the brown sugar. Let it caramelize until it turns a deep golden brown.
- Sauté the Aromatics: Add chopped onions, garlic, bell peppers, carrots, and scotch bonnet pepper. Cook until softened.
- Build the Sauce: Stir in tomato paste, soy sauce, Worcestershire sauce, and diced tomatoes. Pour in the broth and bring the mixture to a simmer.
- Simmer the Stew: Return the salmon fillets to the skillet, spooning the sauce over them. Cover and let it simmer for 10-15 minutes, allowing the flavors to meld together.
- Final Touches: Adjust seasoning with salt and pepper, garnish with green onions, and serve hot with your preferred side.
