Cheesy Stuffed Meatloaf Bites are juicy, bite-sized meatloaf snacks filled with gooey cheese. Perfect for appetizers, meal prep, or kid-friendly dinners, these easy-to-make meatloaf bites are crispy on the outside and melty inside. Try them baked or air-fried for a delicious twist on a classic!

Ingredients

Scale
  • 1 lb ground beef (or a mix of beef and pork)
  • ½ cup onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup breadcrumbs
  • 1 egg
  • 1 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tsp mustard
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 4 oz cheese (cheddar, mozzarella, or preferred variety), cut into small cubes
  • 1 tbsp olive oil (for greasing)

  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Preheat the Oven: Set oven to 375°F (190°C). Lightly grease a muffin tin or line a baking sheet.
  • Prepare the Meat Mixture: In a large bowl, mix ground beef, onion, garlic, breadcrumbs, egg, Worcestershire sauce, ketchup, mustard, Italian seasoning, salt, and pepper. Do not overmix.
  • Form the Meatloaf Bites: Take a small portion of meat mixture, flatten it, place a cheese cube in the center, and wrap the meat around it, forming a ball. Ensure cheese is fully enclosed.
  • Bake: Place meatloaf bites in the prepared tin or sheet and bake for 18-22 minutes, until cooked through and crispy on the outside.

  • Rest & Serve: Let them rest for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

  • Spicy Kick: Add chopped jalapeños or red pepper flakes for heat.
  • Cheese Variations: Try gouda, pepper jack, or blue cheese for different flavors.
  • Gluten-Free Option: Swap breadcrumbs for almond flour or gluten-free crackers.
  • Lean Alternative: Use ground turkey or chicken instead of beef.

  • Bacon-Wrapped: Wrap each bite in bacon before baking for extra smokiness.
