- 1 cup fresh cherries, pitted and chopped
- 4 oz goat cheese, softened
- 2 tbsp honey, divided
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp fresh thyme leaves
- ¼ cup chopped nuts (optional, pistachios or walnuts)

Prepare the Baguette:
- Preheat the oven to 375°F (190°C).
- Arrange baguette slices on a baking sheet and lightly brush each with olive oil.

Toast the Bread:
- Bake for 8-10 minutes until golden and crisp. Remove and set aside.

- In a bowl, mix chopped cherries with 1 tbsp honey, balsamic vinegar, salt, and black pepper. Let marinate for 10 minutes.

- Spread goat cheese on each toasted baguette slice.
- Spoon cherry mixture over the cheese.

- Sprinkle with fresh thyme and optional chopped nuts.
