Chicken Sausages with Zucchini, Tomatoes, and Pasta

Description

A quick and flavorful one-pan meal combining chicken sausages, fresh zucchini, cherry tomatoes, and pasta. Perfect for busy weeknights, this dish is customizable, nutritious, and sure to please the whole family.


Ingredients

  • Chicken sausages: 4, sliced into bite-sized pieces
  • Zucchini: 2 medium, sliced
  • Cherry tomatoes: 2 cups, halved
  • Pasta: 12 oz, penne or farfalle preferred
  • Olive oil: 2 tablespoons
  • Garlic: 3 cloves, minced
  • Onion: 1 small, diced
  • Fresh basil: 2 tablespoons, chopped
  • Dried Italian seasoning: 1 teaspoon
  • Red pepper flakes: ½ teaspoon (optional)
  • Parmesan cheese: ½ cup, grated
  • Salt: To taste
  • Black pepper: To taste

Instructions

  1. Cook the Pasta
    • Boil salted water in a large pot. Add pasta and cook until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Prepare the Sausages
    • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add sliced chicken sausages and cook for 6–8 minutes until browned. Remove and set aside.
  3. Sauté the Vegetables
    • Add the remaining olive oil to the same skillet. Sauté garlic and onion until fragrant. Add zucchini and cook for 4–5 minutes until tender. Add cherry tomatoes and cook for 3–4 minutes, allowing them to blister.
  4. Combine Ingredients
    • Return sausages to the skillet. Stir in Italian seasoning, red pepper flakes, salt, and black pepper. Mix until evenly coated.
  5. Toss with Pasta
    • Add cooked pasta to the skillet. Pour in a splash of reserved pasta water and toss to combine. Heat through over medium heat.
  6. Finish and Serve
    • Remove from heat and stir in chopped basil. Top with grated Parmesan cheese. Serve warm, garnished with additional basil and Parmesan if desired.
