Ingredients

Scale
  • Protein:
    • 1 lb boneless, skinless chicken breast or thighs, sliced
  • Sauce:
    • 1/4 cup soy sauce (or tamari for gluten-free option)
    • 2 tbsp brown sugar or honey
    • 2 cloves garlic, minced
    • 1 tsp grated ginger
    • 1 tsp sesame oil
    • 1 tbsp rice vinegar
    • 1 tbsp cornstarch mixed with 2 tbsp water
  • Other:
    • 2 tbsp vegetable oil
    • 8 oz noodles (lo mein, ramen, or udon)
    • 1/2 cup carrots, julienned
    • 1/2 cup bell peppers, sliced
    • 1 cup broccoli florets
    • 2 green onions, chopped
    • 1 tbsp sesame seeds

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together soy sauce, brown sugar or honey, garlic, ginger, sesame oil, rice vinegar, and cornstarch slurry. Set aside.
  2. Cook the Chicken: Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add sliced chicken and cook until golden brown and cooked through. Remove from the skillet and set aside.
  3. Cook the Vegetables: In the same skillet, add another tbsp of oil if needed. Stir-fry carrots, bell peppers, and broccoli until tender-crisp.
  4. Boil the Noodles: Cook the noodles according to package instructions, then drain and set aside.
  5. Combine Everything: Return the cooked chicken to the skillet with the vegetables. Pour the prepared teriyaki sauce over the mixture and stir to coat evenly.
  6. Add the Noodles: Toss the cooked noodles into the skillet, mixing well to ensure they absorb the sauce.
  7. Garnish and Serve: Sprinkle with chopped green onions and sesame seeds. Serve hot and enjoy!
