  • 1 lb boneless, skinless chicken breast or thighs, sliced
  • 2 tbsp cornstarch
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp Shaoxing wine or dry sherry
  • 4 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/2 tsp red chili flakes
  • 1 tbsp brown sugar
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1/2 cup chicken broth
  • 1 tsp sesame oil
  • 2 green onions, chopped
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1/2 cup water chestnuts (optional)
  • 2 tbsp cooking oil

Instructions

Step 1: Prepare the Chicken

  1. Slice the chicken into thin strips.
  2. In a bowl, mix the chicken with soy sauce and cornstarch, allowing it to marinate for 10–15 minutes.

Step 2: Make the Garlic Sauce

  1. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, rice vinegar, Shaoxing wine, brown sugar, and chicken broth.
  2. Set aside for later use.

Step 3: Cook the Chicken

  1. Heat a wok or large skillet over medium-high heat and add cooking oil.
  2. Add the marinated chicken and stir-fry for 3–4 minutes until golden brown.
  3. Remove the chicken and set aside.

Step 4: Stir-Fry the Vegetables

  1. In the same pan, add a bit more oil if needed.
  2. Add minced garlic, ginger, and red chili flakes, stirring until fragrant.
  3. Toss in bell peppers, carrots, and water chestnuts, cooking until slightly tender.

Step 5: Combine Everything

  1. Return the cooked chicken to the pan.
  2. Pour in the prepared garlic sauce and stir well to coat everything evenly.
  3. Cook for another 2–3 minutes until the sauce thickens.
  4. Drizzle with sesame oil and garnish with green onions before serving.

Notes

  • Vegetarian Version – Swap chicken for tofu or mushrooms for a plant-based dish.
  • Spicy Kick – Increase red chili flakes or add chili paste for extra heat.
  • Low-Sodium – Use low-sodium soy sauce and reduce added salt.
