- 1 lb boneless, skinless chicken breast or thighs, sliced
- 2 tbsp cornstarch
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp Shaoxing wine or dry sherry
- 4 cloves garlic, minced
- 1 tsp ginger, minced
- 1/2 tsp red chili flakes
- 1 tbsp brown sugar
- 2 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1/2 cup chicken broth
- 1 tsp sesame oil
- 2 green onions, chopped
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1/2 cup water chestnuts (optional)
- 2 tbsp cooking oil
Instructions
Step 1: Prepare the Chicken
- Slice the chicken into thin strips.
- In a bowl, mix the chicken with soy sauce and cornstarch, allowing it to marinate for 10–15 minutes.
Step 2: Make the Garlic Sauce
- In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, rice vinegar, Shaoxing wine, brown sugar, and chicken broth.
- Set aside for later use.
Step 3: Cook the Chicken
- Heat a wok or large skillet over medium-high heat and add cooking oil.
- Add the marinated chicken and stir-fry for 3–4 minutes until golden brown.
- Remove the chicken and set aside.
Step 4: Stir-Fry the Vegetables
- In the same pan, add a bit more oil if needed.
- Add minced garlic, ginger, and red chili flakes, stirring until fragrant.
- Toss in bell peppers, carrots, and water chestnuts, cooking until slightly tender.
Step 5: Combine Everything
- Return the cooked chicken to the pan.
- Pour in the prepared garlic sauce and stir well to coat everything evenly.
- Cook for another 2–3 minutes until the sauce thickens.
- Drizzle with sesame oil and garnish with green onions before serving.
