Instructions
- Prepare the chickpeas – Rinse and drain chickpeas thoroughly. Pat dry with a paper towel to remove excess moisture.
- Blend the base – In a food processor, combine chickpeas, peanut butter (or almond butter), maple syrup (or honey), vanilla extract, baking soda, and salt. Blend until smooth and creamy.

- Shape the cookies – Use a spoon or cookie scoop to portion out small rounds of dough onto a parchment-lined baking sheet. Slightly flatten them with the back of a spoon.
- Bake – Preheat oven to 350°F (175°C) and bake for 12-15 minutes or until golden brown.
