Chickpea Chocolate Chip Cookies

  • Total Time: 25 minutes
  • Yield: 12 cookies 1x

Description

Soft, chewy Chickpea Chocolate Chip Cookies made with wholesome ingredients. Naturally gluten-free, protein-packed, and deliciously rich, these cookies offer a healthy twist on a classic treat.

Ingredients

Scale
  • 1 1/2 cups cooked or canned chickpeas (rinsed and drained)
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Prepare the chickpeas – Rinse and drain chickpeas thoroughly. Pat dry with a paper towel to remove excess moisture.
  2. Blend the base – In a food processor, combine chickpeas, peanut butter (or almond butter), maple syrup (or honey), vanilla extract, baking soda, and salt. Blend until smooth and creamy.
  3. Add chocolate chips – Transfer the dough to a bowl and fold in the chocolate chips using a spatula.
  4. Shape the cookies – Use a spoon or cookie scoop to portion out small rounds of dough onto a parchment-lined baking sheet. Slightly flatten them with the back of a spoon.
  5. Bake – Preheat oven to 350°F (175°C) and bake for 12-15 minutes or until golden brown.
  6. Cool and enjoy – Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack. Enjoy warm or store for later.

Notes

  • Nut-Free Option – Swap peanut butter for sunflower seed butter.
  • Sweeter Version – Increase maple syrup or add a touch of coconut sugar.
  • Add-Ins – Mix in chopped nuts, coconut flakes, or a sprinkle of cinnamon.
  • Vegan Option – Use dairy-free chocolate chips.
