Ingredients

Scale
  • 1 1/2 cups cooked or canned chickpeas (drained and rinsed)
  • 1/2 cup mixed vegetables (such as bell pepper, zucchini, carrot, or spinach), finely chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup chickpea flour (or all-purpose flour)
  • 1/2 teaspoon baking powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 1/4 cup water or plant-based milk
  • Oil for frying

Instructions

  1. Prepare Ingredients: Drain and rinse chickpeas if using canned. Finely chop vegetables, onion, garlic, and herbs.
  2. Mash Chickpeas: In a large bowl, mash chickpeas with a fork or potato masher, leaving some texture.
  3. Mix Batter: Add chopped vegetables, onion, garlic, herbs, flour, baking powder, and spices to mashed chickpeas. Gradually mix in water or plant-based milk to form a thick batter.
  4. Form Fritters: Scoop small portions of batter and shape into patties.
  5. Cook: Heat oil in a pan over medium heat. Fry fritters in batches, cooking for about 3-4 minutes per side until golden brown and crispy.
  6. Drain & Serve: Transfer to a paper towel-lined plate to remove excess oil. Serve hot with dips or sauces.
