Ingredients
- 1 lb ground beef (or ground turkey/chicken for a lighter version)
- 4 strips bacon, chopped
- 1 onion, finely diced
- 2 cloves garlic, minced
- 2 large eggs
- 1 cup breadcrumbs
- 2 tbsp Worcestershire sauce
- 2 tbsp tomato paste
- 1/4 cup ketchup
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- Fresh parsley (optional, for garnish)
Instructions
-
Preheat the Oven: Preheat the oven to 375°F (190°C).
-
Cook the Bacon: In a skillet over medium heat, cook the chopped bacon until crispy. Transfer to a paper towel-lined plate to drain and retain the bacon fat.
-
Sauté the Vegetables: In the same skillet, sauté the diced onion and minced garlic in the bacon fat for 3-4 minutes until soft and translucent. Remove from heat and let cool slightly.
-
Mix the Meatloaf: In a large bowl, combine ground meat, eggs, breadcrumbs, Worcestershire sauce, tomato paste, ketchup, Italian seasoning, salt, and pepper. Add the sautéed onion and garlic, and cooked bacon. Mix thoroughly, using your hands for best results.
-
Assemble the Meatloaf: Transfer the meat mixture into a greased 9×13-inch baking dish, shaping it into a loaf form.
-
Add the Cheese: Sprinkle the shredded cheddar and mozzarella cheese generously on top of the meatloaf.
-
Bake: Bake for 45-50 minutes until the meatloaf is cooked through and the cheese is golden and bubbly (internal temperature should reach 160°F or 71°C).
-
Serve: Let the meatloaf rest for 5-10 minutes before slicing. Serve with mashed potatoes, roasted vegetables, or a salad.
Notes
- Swap the Protein: Use ground turkey, chicken, or a blend of beef and pork.
- Add Veggies: Incorporate finely chopped carrots, bell peppers, or spinach into the mixture.
- Cheese Variations: Try gouda, provolone, or pepper jack for a smoky or spicy twist.
- Low-Carb Version: Replace breadcrumbs with almond flour or ground flaxseed.
- Spicy Kick: Add chopped jalapeños, chili flakes, or hot sauce.
- Gluten-Free: Substitute gluten-free breadcrumbs or crackers for a gluten-free version.
