Ingredients
Scale
- 2 medium chicken breasts or thighs, diced
- 12 oz fresh or frozen tortellini
- 3 cups fresh broccoli florets (or thawed frozen broccoli)
- 2 tbsp butter
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup chicken broth
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
Instructions
- Prep Ingredients:
- Slice chicken into bite-sized pieces and season with salt, pepper, and Italian seasoning.
- Prepare broccoli florets. If using frozen broccoli, thaw and pat dry.
- Sear Chicken:
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden and fully cooked, about 4-5 minutes per side. Remove and set aside.
- Sauté Garlic:
- Lower heat to medium. Melt butter in the skillet and sauté minced garlic for 30 seconds until fragrant, avoiding browning.
- Make the Sauce:
- Add chicken broth and heavy cream to the skillet. Stir and bring to a gentle simmer. Add Parmesan cheese, stirring until melted and the sauce thickens.
- Cook Tortellini:
- Stir tortellini into the sauce, ensuring it is submerged. Cover and cook for 5-7 minutes, stirring occasionally, until tender.
- Add Broccoli and Chicken:
- Stir in broccoli florets. Cover and steam for about 3 minutes. Return chicken to the skillet and toss everything together to coat in sauce.
- Adjust Seasonings:
- Taste and adjust with additional salt, pepper, or red pepper flakes as needed.
- Serve:
- Garnish with extra Parmesan cheese and parsley if desired. Serve immediately and enjoy!
