  • 2 tbsp olive oil
  • 2 tbsp butter (divided)
  • 4 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • 1 tbsp fresh parsley, chopped (plus more for garnish)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tbsp lemon juice
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 cup basmati rice
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare the Chicken:
    Season chicken with salt and pepper. Heat olive oil and 1 tbsp butter in a large skillet over medium heat. Sear chicken for 3-4 minutes per side until golden brown. Remove and set aside.
  2. Sauté Aromatics:
    In the same skillet, melt the remaining 1 tbsp butter. Sauté garlic and shallots for 2 minutes until fragrant.
  3. Deglaze the Pan:
    Add chicken broth to deglaze, scraping up browned bits from the bottom of the pan.
  4. Make the Cream Sauce:
    Reduce heat to low. Stir in heavy cream, lemon juice, and Parmesan cheese. Add thyme, rosemary, and parsley. Simmer for 5 minutes, adjusting salt and pepper to taste.
  5. Cook the Basmati Rice:
    Meanwhile, cook basmati rice according to package instructions. Fluff with a fork and set aside.
  6. Finish the Chicken:
    Return chicken to the skillet, nestling it in the sauce. Cover and cook for 10 minutes or until the chicken is fully cooked.
  7. Serve:
    Plate basmati rice and top with creamy herb chicken. Garnish with additional parsley.
