Instructions

  • Sauté the Aromatics: Heat butter or olive oil in a large pot over medium heat. Add chopped onions and cook until soft. Stir in minced garlic and cook for another minute.
  • Cook the Mushrooms: Add sliced mushrooms and cook until they release their juices and brown. Stir occasionally.
  • Thicken the Base: Sprinkle flour or cornstarch over the mushrooms, stirring well. Cook for a minute to eliminate the raw flour taste.
  • Simmer the Soup: Slowly pour in the broth while stirring to avoid lumps. Simmer for 10-15 minutes to blend flavors.
  • Blend for Creaminess (Optional): For a smoother texture, use an immersion blender to partially blend the soup.
  • Add the Spinach and Cream: Stir in spinach and cook until wilted. Reduce heat and slowly add cream or milk. Season with nutmeg, salt, and pepper.
