Instructions

  1. Prepare the Ingredients: If using jarred roasted red peppers, drain and rinse them. If roasting fresh peppers, char them over an open flame or in a 450°F oven until blackened, then peel and remove the seeds.
  2. Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, and carrot; sauté for about 5 minutes until softened.
  3. Add the Peppers and Spices: Stir in the roasted red peppers, oregano, smoked paprika, salt, black pepper, and red pepper flakes. Cook for another 2 minutes.
  4. Simmer the Soup: Pour in the vegetable broth and bring to a gentle boil. Reduce heat and let simmer for 15 minutes.
  5. Blend Until Smooth: Use an immersion blender to puree the soup until smooth. Alternatively, carefully blend in batches using a regular blender.
  6. Add the Cream: Stir in the heavy cream or coconut milk. Simmer for another 5 minutes and adjust seasoning as needed.
