  • 2 cups fresh spinach
  • 4 oz cream cheese, softened
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/4 cup sour cream
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Prepare the spinach mixture – In a pan over medium heat, warm olive oil and sauté garlic until fragrant. Add fresh spinach and cook until wilted. Remove from heat and let cool slightly.
  3. Make the creamy filling – In a bowl, mix softened cream cheese, sour cream, Parmesan cheese, onion powder, Italian seasoning, and a pinch of salt and pepper. Stir in the cooked spinach.
  4. Prepare the chicken – Season the chicken breasts with salt, black pepper, paprika, and optional red pepper flakes. Place them in the baking dish.
  5. Assemble the dish – Evenly spread the spinach and cream cheese mixture over each chicken breast, then sprinkle shredded mozzarella cheese on top.
  6. Bake – Place the dish in the oven and bake for 25-30 minutes, or until the chicken is fully cooked and the cheese is golden and bubbly.
  7. Serve – Let the dish rest for a few minutes before serving. Garnish with fresh parsley or extra Parmesan if desired.
