- 2 tbsp Butter
- 1 tbsp Olive oil
- 1 medium Onion, diced
- 4 cloves Garlic, minced
- 6 cups Chicken broth
- 2 tsp Italian seasoning
- 1 tsp Salt (adjust to taste)
- 1/2 tsp Pepper
- 1/4 tsp Red pepper flakes (optional)
- 3 cups Cooked shredded chicken (rotisserie chicken works well)
- 8 lasagna noodles, broken into bite-sized pieces
- 1 cup Heavy cream
- 4 oz Cream cheese, softened
- 1 cup Parmesan cheese, grated
- 2 cups Mozzarella cheese, shredded
- 2 cups Fresh spinach leaves
Instructions
- Prepare the Base
- In a large pot or Dutch oven, heat butter and olive oil over medium heat.
- Add diced onion and sauté for 4–5 minutes until translucent. Stir in minced garlic and cook for another minute until fragrant.
- Create the Broth
- Pour in chicken broth and bring to a gentle simmer. Add Italian seasoning, salt, pepper, and red pepper flakes (if using). Stir well.
- Add shredded cooked chicken to the pot and let it warm through.
- Cook the Noodles
- Break lasagna noodles into smaller pieces and add to the broth. Simmer gently, stirring occasionally, until the noodles are cooked al dente.
- Make It Creamy
- Reduce heat to low. Stir in heavy cream, cream cheese, and Parmesan cheese, mixing until smooth and creamy.
- Add Spinach
- Add fresh spinach leaves and stir until wilted, about 2–3 minutes.
- Finish with Mozzarella
- Sprinkle shredded mozzarella on top and stir lightly to let it melt into the soup.
- Serve
- Ladle the soup into bowls. Optionally garnish with extra Parmesan cheese or fresh herbs. Serve warm with crusty bread or a side salad.
Notes
- Storage: Refrigerate in an airtight container for up to 3–4 days.
- Freezing: Freeze the base (without noodles) for up to 3 months. Reheat and add cooked noodles before serving.
- Reheating: Warm in a pot over low heat. Add chicken broth or cream if the soup has thickened too much.
