  • 1 tbsp Olive oil
  • 1 medium Onion, diced
  • 4 cloves Garlic, minced
  • 6 cups Chicken broth
  • 2 tsp Italian seasoning
  • 1 tsp Salt (adjust to taste)
  • 1/2 tsp Pepper
  • 1/4 tsp Red pepper flakes (optional)
  • 3 cups Cooked shredded chicken (rotisserie chicken works well)
  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 cup Heavy cream
  • 4 oz Cream cheese, softened
  • 1 cup Parmesan cheese, grated
  • 2 cups Mozzarella cheese, shredded
  • 2 cups Fresh spinach leaves

Instructions

  1. Prepare the Base
    • In a large pot or Dutch oven, heat butter and olive oil over medium heat.
    • Add diced onion and sauté for 4–5 minutes until translucent. Stir in minced garlic and cook for another minute until fragrant.
  2. Create the Broth
    • Pour in chicken broth and bring to a gentle simmer. Add Italian seasoning, salt, pepper, and red pepper flakes (if using). Stir well.
    • Add shredded cooked chicken to the pot and let it warm through.
  3. Cook the Noodles
    • Break lasagna noodles into smaller pieces and add to the broth. Simmer gently, stirring occasionally, until the noodles are cooked al dente.
  4. Make It Creamy
    • Reduce heat to low. Stir in heavy cream, cream cheese, and Parmesan cheese, mixing until smooth and creamy.
  5. Add Spinach
    • Add fresh spinach leaves and stir until wilted, about 2–3 minutes.
  6. Finish with Mozzarella
    • Sprinkle shredded mozzarella on top and stir lightly to let it melt into the soup.
  7. Serve
    • Ladle the soup into bowls. Optionally garnish with extra Parmesan cheese or fresh herbs. Serve warm with crusty bread or a side salad.
