  • 1/2 cup buttermilk
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1 egg, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying

    Bang Bang Sauce:

     

    • 1/4 cup mayonnaise
    • 2 tbsp sweet chili sauce
    • 1 tbsp sriracha
    • 1 tbsp honey
    • 1 tsp lime juice
    • Chopped scallions, for garnish

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice. Set aside.
  2. Marinate the Salmon: Place salmon pieces in a bowl and cover with buttermilk. Let marinate for 10-15 minutes.
  3. Prepare the Coating: In a shallow dish, mix flour, cornstarch, baking powder, salt, black pepper, paprika, garlic powder, and cayenne pepper.
  4. Bread the Salmon: Remove salmon from buttermilk, letting excess drip off. Dredge in the flour mixture, dip in beaten egg, then coat in panko breadcrumbs, pressing gently to adhere.
  5. Heat the Oil: Heat vegetable oil in a deep skillet to 350°F (175°C).
  6. Fry the Salmon: Fry in batches for 3-4 minutes until golden brown and crispy. Drain on a paper towel-lined plate.
  7. Coat with Sauce: Toss crispy salmon bites in Bang Bang sauce.
  8. Garnish & Serve: Sprinkle with chopped scallions and serve immediately.
