Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- Prepare Carrots: Peel and trim carrots. If large, slice them in half lengthwise for even cooking. Arrange on the prepared baking sheet.
- Make Honey Garlic Butter: In a small saucepan, melt butter over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant. Stir in honey, olive oil, salt, and black pepper. Cook for 1 minute, then remove from heat.
- Coat Carrots: Pour the honey garlic butter mixture over the carrots, tossing to coat evenly. Spread carrots in a single layer on the baking sheet.
- Roast: Roast in the preheated oven for 20–25 minutes, turning halfway through, until the carrots are caramelized and fork-tender.
- Garnish and Serve: Transfer to a serving platter, sprinkle with fresh parsley, and serve warm.
