- 1 can (10 oz) Rotel diced tomatoes with green chilies
- 8 oz cream cheese
- 1 packet (1 oz) taco seasoning
- ½ cup chicken broth or water
- 1 cup shredded cheese (optional)
- Fresh cilantro (optional, for garnish)
Instructions
- Prepare the Crock Pot: Lightly grease the slow cooker to prevent sticking.
- Layer the Ingredients: Place the chicken breasts at the bottom of the slow cooker. Add black beans, corn, and Rotel tomatoes on top.
- Season: Sprinkle taco seasoning evenly over the ingredients.
- Add Liquid: Pour in the chicken broth or water.
- Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender.
- Shred the Chicken: Use two forks to shred the chicken directly in the crock pot.
- Add Cream Cheese: Cut cream cheese into chunks and stir until melted and combined.
