Description
Spicy and flavorful Dak Galbi is a Korean stir-fried chicken dish made with gochujang, vegetables, and chewy rice cakes. Perfect for a one-pan meal, this recipe is easy to prepare and highly customizable.

- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 3 tbsp gochujang (Korean red chili paste)
- 1 tbsp gochugaru (Korean red pepper flakes)
- 2 tbsp soy sauce
- 3 cloves garlic, minced
- 1 tsp grated ginger
- 1 tbsp sesame oil
- 1 tbsp sugar
- 2 tbsp rice wine (mirin or soju)
- 2 cups cabbage, chopped
- 1 small sweet potato, thinly sliced
- 1 small carrot, thinly sliced
- 1 onion, thinly sliced
- 2 scallions, sliced into long strips
- 5–6 perilla leaves (optional)
- 1 cup tteok (Korean rice cakes), soaked if needed
- 1 tbsp cooking oil
- 1 tbsp sesame seeds
- 1/2 cup mozzarella cheese (optional)
- Steamed rice (for serving)
Instructions
- Prepare the Marinade: In a mixing bowl, combine gochujang, gochugaru, soy sauce, minced garlic, grated ginger, sesame oil, sugar, and rice wine. Stir until well blended.
- Marinate the Chicken: Coat the chicken pieces thoroughly with the marinade. Let it sit for at least 30 minutes (or overnight for deeper flavor).
- Prepare the Vegetables: Chop the cabbage, slice the sweet potato and carrot thinly, and cut the onion into thin slices. Set aside.
- Cook the Chicken: Heat a large pan over medium-high heat with cooking oil. Spread the marinated chicken evenly in the pan and let it sear for a few minutes.
- Add the Vegetables: Stir in cabbage, sweet potato, carrot, and onion. Mix well, allowing them to absorb the sauce.
- Incorporate the Tteok: Add Korean rice cakes to the pan and stir them in. If they are hard, soak them in warm water beforehand.
- Simmer and Stir: Lower the heat, stirring occasionally, until the chicken is cooked through and vegetables are tender.
- Optional Cheese Topping: Sprinkle mozzarella cheese over the dish and let it melt before serving.
- Garnish and Serve: Sprinkle with sesame seeds and scallions. Serve hot with steamed rice and perilla leaves if available.
Notes
- Less Spicy: Reduce gochujang and gochugaru or use a milder chili sauce.
- Cheesy Dak Galbi: Add more mozzarella cheese for a creamy texture.
- Seafood Addition: Include shrimp or squid for a seafood variation.
- Vegan Option: Use tofu or mushrooms instead of chicken and plant-based soy sauce.
