  • 1 cup breadcrumbs
  • 2 large eggs

  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard

Instructions

Step 1: Preheat the oven
Preheat your oven to 375°F (190°C).

Step 2: Prepare the meatloaf mixture
In a large mixing bowl, combine the ground beef (or turkey), breadcrumbs, eggs, minced garlic, finely chopped onion, and milk. Season with salt, pepper, and fresh herbs. Mix everything together until fully combined.

Step 3: Shape the meatloaf
Transfer the meat mixture to a greased baking dish or lined baking sheet. Shape it into a loaf about 9 inches long and 5 inches wide.

Step 4: Make the balsamic glaze
In a small saucepan, combine balsamic vinegar, ketchup, brown sugar, and Dijon mustard. Stir over medium heat and simmer for about 5 minutes until thickened.

Step 5: Bake the meatloaf
Place the meatloaf in the oven and bake for about 45 minutes. After 30 minutes, brush the top with the balsamic glaze and continue baking until the meatloaf reaches an internal temperature of 160°F (71°C).

 

Step 6: Let it rest and serve
Remove the meatloaf from the oven and let it rest for 10 minutes. Slice and drizzle with remaining balsamic glaze before serving.
