- 2 lbs pork shoulder or pork belly
- 3 tbsp soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp oyster sauce
- 2 tbsp honey (plus extra for glazing)
- 2 tbsp brown sugar
- 1 tsp Chinese five-spice powder
- 3 cloves garlic, minced
- 1 tbsp red fermented bean curd (optional for color and flavor)
- 2 tbsp Shaoxing wine or dry sherry
- 1 tsp sesame oil
- 1/2 tsp white pepper
- A few drops of red food coloring (optional)
Instructions
- Prepare the Marinade – In a bowl, mix soy sauce, hoisin sauce, oyster sauce, honey, brown sugar, Chinese five-spice powder, minced garlic, red fermented bean curd (if using), Shaoxing wine, sesame oil, and white pepper. Stir until well combined.
- Marinate the Pork – Cut pork into 1-2 inch thick strips. Coat evenly with marinade, cover, and refrigerate for at least 4 hours (preferably overnight).
- Preheat the Oven – Set oven to 375°F (190°C). Line a baking sheet with foil and place a wire rack on top.
- Bake the Pork – Arrange marinated pork on the wire rack, reserving leftover marinade. Bake for 25 minutes.
- Baste and Continue Cooking – Brush with reserved marinade, flip, and bake for another 20 minutes.
- Caramelize the Glaze – Mix extra honey with reserved marinade. Brush pork and increase oven temperature to 425°F (220°C). Bake for 5-10 more minutes until caramelized.
- Rest and Serve – Let pork rest for 10 minutes before slicing. Serve warm.
