Ingredients
Scale
- 2 chicken breasts, cut into bite-sized pieces
- 1 (20 oz) package cheese-filled ravioli
- 2 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup sun-dried tomatoes, chopped
- ½ cup grated parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (adjust to taste)
- ¼ cup fresh basil, chopped
- Salt and pepper, to taste
Instructions
- Prepare the Chicken: Season the chicken pieces with salt, pepper, and Italian seasoning.
- Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken pieces and cook until golden brown and fully cooked. Remove and set aside.
- Sauté Garlic: In the same skillet, melt butter and sauté minced garlic until fragrant.
- Make the Sauce: Pour in chicken broth, scraping up any browned bits from the pan. Add heavy cream, sun-dried tomatoes, and red pepper flakes. Stir well and let simmer for a few minutes.
- Add Cheese: Stir in grated parmesan cheese, allowing it to melt into the sauce for a smooth, rich texture.
- Cook the Ravioli: In a separate pot, cook the cheese-filled ravioli according to package instructions. Drain and set aside.
- Combine Everything: Return the cooked chicken to the skillet, then gently fold in the cooked ravioli. Stir until well coated with the creamy sauce.
- Garnish and Serve: Sprinkle with freshly chopped basil and additional parmesan cheese. Serve hot.
Notes
- Use different pasta – Swap ravioli for tortellini, gnocchi, or fettuccine for a twist on the dish.
- Add vegetables – Toss in spinach, mushrooms, or cherry tomatoes for extra nutrition and flavor.
- Make it spicy – Increase the red pepper flakes or add a dash of cayenne pepper for a kick.
- Dairy-free option – Use coconut cream instead of heavy cream and nutritional yeast instead of parmesan.
