Ingredients

Scale

For the Shrimp:

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp lime juice
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil (for cooking)

For the Bowls:

  • 2 cups cooked rice (white, brown, or quinoa)
  • 1 avocado, sliced
  • ½ cucumber, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 1 tbsp sesame seeds

For the Spicy Mayo:

  • ¼ cup mayonnaise (or Greek yogurt for a healthier option)
  • 1 tbsp sriracha (adjust to taste)
  • 1 tsp honey

Instructions

  • Prepare the Shrimp – In a bowl, mix shrimp with soy sauce, sesame oil, garlic, ginger, lime juice, salt, and pepper. Marinate for 10–15 minutes.
  • Cook the Shrimp – Heat olive oil in a skillet over medium-high heat. Add shrimp and cook for 2–3 minutes per side until pink and opaque. Remove from heat.
  • Make the Spicy Mayo – In a small bowl, whisk together mayonnaise, sriracha, and honey until smooth. Adjust spice level to taste.
  • Prepare the Vegetables – Slice avocado, cucumber, and carrots. Chop green onions.
  • Assemble the Bowls – Divide cooked rice into serving bowls. Top with shrimp, avocado, cucumber, and carrots.
  • Garnish & Serve – Drizzle with spicy mayo and sprinkle with sesame seeds and green onions. Serve immediately with extra lime juice or soy sauce if desired.

Notes

  • Protein Swap – Use chicken, tofu, or salmon instead of shrimp.
  • Grain Options – Substitute rice with quinoa, cauliflower rice, or brown rice.
  • Extra Crunch – Add chopped nuts or crispy onions.
  • Milder Sauce – Reduce or omit sriracha for a less spicy mayo.
  • Alternative Sauces – Try teriyaki sauce or a ginger-soy dressing.
