Instructions

  1. Prepare the Apple Filling: In a medium saucepan, melt butter over medium heat. Add diced apples, brown sugar, cinnamon, and lemon juice. Stir occasionally and cook until apples are soft and caramelized. Set aside.
  2. Make the Pancake Batter: In a large bowl, whisk together flour, baking powder, sugar, and salt. In a separate bowl, beat eggs, then add milk and vanilla extract. Combine wet and dry ingredients, stirring until just mixed. Let the batter rest for a few minutes.
  3. Heat the Pan: Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  4. Cook the Pancakes: Pour a small amount of batter onto the skillet. After a few seconds, add a spoonful of apple filling to the center, then cover with more batter. Cook for 2-3 minutes until bubbles form on the surface. Flip and cook for another 2-3 minutes until golden brown.
