Instructions

  1. Prepare the Ingredients: Chop onion, garlic, carrots, and celery. Dice the bacon and cut chicken into bite-sized chunks if using raw chicken.
  2. Cook the Bacon: In a large pot or Dutch oven, cook diced bacon over medium heat until crispy. Remove and set aside.
  3. Sauté the Vegetables: In the same pot with bacon drippings, sauté onion, carrots, and celery until softened (about 5 minutes). Add garlic and cook for another minute.
  4. Cook the Chicken: If using raw chicken, add it to the pot and cook until no longer pink.
  5. Add Broth and Seasonings: Pour in chicken broth, Italian seasoning, salt, and pepper. Bring to a simmer.
  6. Cook the Gnocchi: Add gnocchi and cook according to package instructions (about 3-5 minutes) until they float.
  7. Make It Creamy: Reduce heat and stir in heavy cream and parmesan cheese. Simmer for a couple of minutes until thickened.
  8. Add Greens and Bacon: Stir in spinach or kale if using. Return bacon to the soup.
