  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 cup tomato sauce
  • 1 packet (1 oz) taco seasoning
  • 6 small tortillas, cut into strips
  • 2 cups shredded cheese (cheddar, Mexican blend, or your choice)
  • ½ cup sour cream
  • ¼ cup green onions, chopped (for garnish)

 

  • ¼ cup cilantro, chopped (optional for garnish)

Instructions

  • Preheat the Oven – Set to 375°F (190°C) and lightly grease a baking dish.
  • Prepare the Filling – In a large bowl, mix chicken, rice, black beans, corn, diced tomatoes, tomato sauce, and taco seasoning until well combined.
  • Layer the Casserole – Spread a thin layer of the mixture at the bottom of the baking dish. Place tortilla strips over it. Repeat layers, finishing with a layer of tortillas on top.
  • Add Cheese – Sprinkle shredded cheese generously over the top layer.
  • Bake – Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden brown.

 

  • Serve – Let cool slightly. Top with sour cream, green onions, and cilantro before serving.
