Ingredients

  • 1/2 cup Greek yogurt
  • 2 tbsp lemon juice

  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 red onion, thinly sliced
  • 1/2 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups romaine lettuce, chopped
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 cups cooked rice or quinoa
  • 1/2 cup tzatziki sauce
  • 1 tbsp fresh dill, chopped
  • Pita chips (optional)

Instructions

  1. Prepare the Chicken Marinade – In a bowl, mix Greek yogurt, lemon juice, olive oil, garlic, oregano, cumin, paprika, salt, and black pepper. Coat the chicken breasts and marinate for at least 30 minutes (overnight for best results).
  2. Cook the Chicken – Heat a grill pan or skillet over medium-high heat. Cook the chicken for 6-7 minutes per side until fully cooked. Let it rest before slicing.
  3. Prepare the Fresh Ingredients – Chop the red onion, cucumber, cherry tomatoes, and romaine lettuce. Slice the olives and crumble the feta cheese.
  4. Assemble the Bowls – Divide cooked rice or quinoa into bowls. Top with sliced chicken, fresh vegetables, olives, and feta cheese.
