- 1/4 cup Kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 cups cooked rice or quinoa
- 1/2 cup tzatziki sauce
- 1 tbsp fresh dill, chopped
- Pita chips (optional)
Instructions
- Prepare the Chicken Marinade – In a bowl, mix Greek yogurt, lemon juice, olive oil, garlic, oregano, cumin, paprika, salt, and black pepper. Coat the chicken breasts and marinate for at least 30 minutes (overnight for best results).
- Cook the Chicken – Heat a grill pan or skillet over medium-high heat. Cook the chicken for 6-7 minutes per side until fully cooked. Let it rest before slicing.
- Prepare the Fresh Ingredients – Chop the red onion, cucumber, cherry tomatoes, and romaine lettuce. Slice the olives and crumble the feta cheese.
- Assemble the Bowls – Divide cooked rice or quinoa into bowls. Top with sliced chicken, fresh vegetables, olives, and feta cheese.
- Drizzle with Tzatziki Sauce – Spoon tzatziki sauce over the top and garnish with fresh dill.
- Serve with Pita Chips – If desired, add pita chips for extra crunch.
