- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (15 oz) tomato sauce
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 4 cups Fritos corn chips
- 2 cups shredded cheddar cheese
- 2 green onions, chopped (for garnish)
- Sour cream (optional, for serving)
- Sliced jalapeños (optional, for serving)
Instructions
- Preheat Oven – Set oven to 350°F (175°C).
- Cook Beef – In a skillet over medium heat, cook ground beef until browned; drain excess grease.
- Sauté Aromatics – Add onion and garlic, cooking until softened (about 2-3 minutes).
- Add Seasonings & Veggies – Stir in taco seasoning, tomato sauce, diced tomatoes with green chilies, black beans, and corn. Simmer for 5 minutes.
- Assemble Casserole – In a greased baking dish, layer half of the Fritos, pour the beef mixture on top, then sprinkle with cheese.
- Bake – Place in the oven and bake for 15-20 minutes until cheese is melted and bubbly.
- Garnish & Serve – Remove from oven, top with green onions, sour cream, and jalapeños. Serve immediately and enjoy!
