  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 4 cups Fritos corn chips
  • 2 cups shredded cheddar cheese
  • 2 green onions, chopped (for garnish)
  • Sour cream (optional, for serving)
  • Sliced jalapeños (optional, for serving)

Instructions

  • Preheat Oven – Set oven to 350°F (175°C).
  • Cook Beef – In a skillet over medium heat, cook ground beef until browned; drain excess grease.
  • Sauté Aromatics – Add onion and garlic, cooking until softened (about 2-3 minutes).
  • Add Seasonings & Veggies – Stir in taco seasoning, tomato sauce, diced tomatoes with green chilies, black beans, and corn. Simmer for 5 minutes.
  • Assemble Casserole – In a greased baking dish, layer half of the Fritos, pour the beef mixture on top, then sprinkle with cheese.
  • Bake – Place in the oven and bake for 15-20 minutes until cheese is melted and bubbly.
  • Garnish & Serve – Remove from oven, top with green onions, sour cream, and jalapeños. Serve immediately and enjoy!
