Instructions

  • Prepare the Ingredients: Zest and juice the lemons. Set aside the fresh lemon juice and zest.
  • Whip the Cream: Using a mixer, whip the heavy cream until soft peaks form. Gradually add half of the sugar and whip until light and fluffy. Refrigerate to keep chilled.
  • Create the Lemon Mixture: Mix the lemon juice, lemon zest, and vanilla extract in a bowl until combined.
  • Beat Egg Whites: In a clean bowl, beat the egg whites until soft peaks form. Slowly add the remaining sugar and whisk until stiff and glossy peaks form.
  • Combine Ingredients: Gently fold the lemon mixture into the whipped cream. Carefully fold the whipped egg whites into the mixture in small batches, maintaining the airy texture.
  • Chill: Spoon the mousse into serving glasses or ramekins. Cover and refrigerate for at least 2 hours to set.
  • Garnish & Serve: Before serving, garnish with lemon zest, fresh berries, or whipped cream, as desired.
