  • 2 tbsp olive oil (divided)
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped

  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper (or to taste)
  • 2 bay leaves

Instructions

  • Prepare the Ingredients: Dice the onion, slice the carrots, chop the celery, and mince the garlic. Set aside.
  • Cook the Chicken: Heat 1 tbsp olive oil in a large pot over medium heat. Season chicken breasts with salt and pepper. Sear for 5-7 minutes per side until golden brown. Remove chicken and set aside to cool.
  • Sauté the Vegetables: In the same pot, add the remaining olive oil. Sauté onion, carrots, and celery for 5 minutes. Add garlic and cook for 1 minute.
  • Add the Broth and Herbs: Pour in the chicken broth, then add thyme, rosemary, bay leaves, salt, and pepper. Stir and bring to a simmer.
  • Shred the Chicken: Shred the cooked chicken with two forks. Add shredded chicken back into the soup.
  • Add Cream for Richness: Stir in heavy cream and simmer for 10-15 minutes, adjusting seasoning if needed.

 

  • Finish and Serve: Remove bay leaves. Ladle soup into bowls and garnish with parsley. Serve hot and enjoy!
