Instructions
- Prepare the Ingredients: Dice the onion, slice the carrots, chop the celery, and mince the garlic. Set aside.
- Cook the Chicken: Heat 1 tbsp olive oil in a large pot over medium heat. Season chicken breasts with salt and pepper. Sear for 5-7 minutes per side until golden brown. Remove chicken and set aside to cool.
