  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

A quick and easy spicy chicken liver recipe with earthy mushrooms, packed with bold flavors and umami richness. Perfect for a weeknight dinner or a hearty appetizer

Ingredients

Scale
  • 1 lb chicken livers
  • 8 oz button or cremini mushrooms, sliced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/2 tsp red chili flakes
  • 1 tsp paprika
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 2 tbsp olive oil or butter
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1/4 cup chicken broth
  • 2 tbsp fresh parsley or cilantro, chopped
  • 1 tbsp lemon juice

Instructions

  1. Prepare the Ingredients – Rinse the chicken livers thoroughly and pat them dry with a paper towel. Trim off any connective tissues. Slice the mushrooms and chop the onion and garlic.
  2. Sauté the Aromatics – Heat olive oil or butter in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 3 minutes. Stir in the garlic and cook for another minute.
  3. Cook the Mushrooms – Add the sliced mushrooms to the skillet and sauté until they release their moisture and turn golden brown, about 5 minutes.
  4. Add the Spices – Sprinkle in red chili flakes, paprika, black pepper, and salt. Stir well to coat the mushrooms and onions with the spices.
  5. Cook the Chicken Livers – Increase the heat to medium-high and add the chicken livers. Cook for 3-4 minutes on each side until they develop a browned crust but remain slightly pink inside.
  6. Deglaze the Pan – Pour in Worcestershire sauce, soy sauce, and chicken broth. Stir to combine and let the mixture simmer for 5 minutes until the sauce reduces slightly.
  7. Finish the Dish – Squeeze fresh lemon juice over the dish and garnish with chopped parsley or cilantro.
  8. Serve – Enjoy hot, paired with rice, bread, or a side of roasted vegetables.

Notes

  • Creamy Version – Stir in a splash of heavy cream or coconut milk for a creamy sauce.
  • Herbal Twist – Add thyme or rosemary for an aromatic depth of flavor.
  • Extra Spicy – Increase the chili flakes or add a chopped fresh chili for more heat.
  • Wine Infusion – Replace chicken broth with white wine for a more sophisticated flavor.
