Ingredients

  • 2 tsp baking powder

  • 2 tbsp instant espresso powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 3/4 cup Greek yogurt
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, melted
  • 1/2 cup chocolate chips or cocoa nibs (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and espresso powder. Set aside.
  3. Mix the wet ingredients: In a large mixing bowl, beat the eggs with granulated sugar and brown sugar until well combined. Add in the Greek yogurt, milk, and vanilla extract, stirring until smooth.
  4. Incorporate the butter: Melt the butter and allow it to cool slightly before stirring it into the wet mixture.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix, as this can make the muffins dense.
  6. Optional addition: If using chocolate chips or cocoa nibs, fold them into the batter at this stage.
  7. Fill the muffin tins: Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
  8. Bake: Place in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool and enjoy: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
