Instructions

- Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and espresso powder. Set aside.
- Mix the wet ingredients: In a large mixing bowl, beat the eggs with granulated sugar and brown sugar until well combined. Add in the Greek yogurt, milk, and vanilla extract, stirring until smooth.
- Incorporate the butter: Melt the butter and allow it to cool slightly before stirring it into the wet mixture.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix, as this can make the muffins dense.
- Optional addition: If using chocolate chips or cocoa nibs, fold them into the batter at this stage.
- Fill the muffin tins: Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
