- Sauces & Seasonings:

- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tbsp Shaoxing wine (or dry sherry)
- 1/2 tsp cornstarch
- 1/4 tsp baking soda
- 1/2 tsp sugar
- 1/4 tsp white pepper
- 1 tsp sesame oil
- Aromatics & Vegetables:
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 3 scallions, sliced
- 1 cup bean sprouts
- Oils:
- 2 tbsp vegetable oil
Instructions
- Marinate the Beef
- In a bowl, mix the sliced beef with 1 tsp light soy sauce, Shaoxing wine, cornstarch, baking soda, and 1 tsp vegetable oil. Marinate for at least 15 minutes.
- Prepare the Noodles
- If using fresh rice noodles, gently separate them. If using dried noodles, soak in warm water as per package instructions, then drain.
- Cook the Beef
- Heat 1 tbsp vegetable oil in a wok over high heat. Sear the beef in a single layer for about 30 seconds per side until just browned. Remove and set aside.
- Stir-Fry the Aromatics
- Add another 1 tbsp vegetable oil to the wok. Sauté garlic and ginger until fragrant.
- Toss in the scallions and stir-fry briefly until softened.
- Cook the Noodles
- Add the noodles to the wok. Drizzle with remaining light soy sauce, dark soy sauce, oyster sauce, and sugar. Stir-fry gently to coat evenly.
- Combine and Finish
- Return the beef to the wok, toss in the bean sprouts, and drizzle with sesame oil.
- Stir-fry for another minute until well combined and heated through.
- Serve
- Transfer to a plate, garnish with extra scallions or sesame seeds if desired, and serve hot.
