    • 1 tbsp oyster sauce
    • 1 tbsp Shaoxing wine (or dry sherry)
    • 1/2 tsp cornstarch
    • 1/4 tsp baking soda
    • 1/2 tsp sugar
    • 1/4 tsp white pepper
    • 1 tsp sesame oil
  • Aromatics & Vegetables:
    • 2 cloves garlic, minced
    • 1-inch ginger, grated
    • 3 scallions, sliced
    • 1 cup bean sprouts
  • Oils:
    • 2 tbsp vegetable oil

Instructions

  1. Marinate the Beef
    • In a bowl, mix the sliced beef with 1 tsp light soy sauce, Shaoxing wine, cornstarch, baking soda, and 1 tsp vegetable oil. Marinate for at least 15 minutes.
  2. Prepare the Noodles
    • If using fresh rice noodles, gently separate them. If using dried noodles, soak in warm water as per package instructions, then drain.
  3. Cook the Beef
    • Heat 1 tbsp vegetable oil in a wok over high heat. Sear the beef in a single layer for about 30 seconds per side until just browned. Remove and set aside.
  4. Stir-Fry the Aromatics
    • Add another 1 tbsp vegetable oil to the wok. Sauté garlic and ginger until fragrant.
    • Toss in the scallions and stir-fry briefly until softened.
  5. Cook the Noodles
    • Add the noodles to the wok. Drizzle with remaining light soy sauce, dark soy sauce, oyster sauce, and sugar. Stir-fry gently to coat evenly.
  6. Combine and Finish
    • Return the beef to the wok, toss in the bean sprouts, and drizzle with sesame oil.
    • Stir-fry for another minute until well combined and heated through.
