This Flavor-Packed Hawaiian Chicken Bake is an easy, one-pan meal featuring juicy chicken, sweet pineapple, and a tangy glaze. Perfect for a quick, delicious dinner with minimal cleanup!

Ingredients

Scale
  • 4 chicken breasts
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 3 garlic cloves, minced
  • ¼ cup soy sauce
  • ½ cup barbecue sauce
  • 2 tbsp brown sugar
  • 1 tsp grated ginger
  • ½ tsp red pepper flakes
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Prepare the ingredients by slicing the bell peppers and onions into strips, and mincing the garlic.
  3. Arrange the chicken in the baking dish and season with salt, pepper, and a drizzle of olive oil.
  4. Make the sauce by combining soy sauce, barbecue sauce, brown sugar, minced garlic, grated ginger, and red pepper flakes in a bowl.
  5. Layer the ingredients by spreading pineapple chunks, sliced bell peppers, and onions over the chicken.
  6. Pour the sauce evenly over the chicken and vegetables, ensuring everything is well coated.
  7. Bake uncovered for 35-40 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
  8. Garnish with cilantro and serve hot with rice or your favorite side dish.

Notes

  • Make it spicier – Add extra red pepper flakes or a dash of hot sauce.
  • Swap the protein – Use boneless pork chops or tofu for a different take.
  • Low-carb option – Serve with cauliflower rice instead of traditional rice.
  • Extra crunch – Top with chopped cashews or toasted sesame seeds.
