Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Prepare the ingredients by slicing the bell peppers and onions into strips, and mincing the garlic.
- Arrange the chicken in the baking dish and season with salt, pepper, and a drizzle of olive oil.
- Make the sauce by combining soy sauce, barbecue sauce, brown sugar, minced garlic, grated ginger, and red pepper flakes in a bowl.
- Layer the ingredients by spreading pineapple chunks, sliced bell peppers, and onions over the chicken.
- Pour the sauce evenly over the chicken and vegetables, ensuring everything is well coated.
- Bake uncovered for 35-40 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
