Instructions
- Preheat the Oven – Set your oven to 350°F (175°C) and grease a baking dish.
- Prepare the Oats – Blend half of the oats into a fine flour-like consistency and mix with the remaining whole oats.
- Mix Wet Ingredients – In a large bowl, whisk eggs, honey or maple syrup, Greek yogurt, milk, and vanilla extract until smooth.
- Combine Dry Ingredients – Add the blended oats, whole oats, baking powder, cinnamon, and salt to the wet mixture. Stir well to combine.
- Fold in Apples – Peel, core, and dice apples into small chunks. Gently fold them into the batter along with nuts and raisins if using.
- Bake – Pour the batter into the greased baking dish and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool and Serve – Let the cake cool slightly before slicing and serving. Enjoy warm or at room temperature.
