Description

A flavorful and comforting Greek Chicken and Lemon Rice dish featuring tender marinated chicken, fragrant lemony rice, and Mediterranean herbs. Perfect for meal prep, easy to make in one pan, and ideal for a weeknight dinner.

  • Chicken & Marinade

    • 4 chicken thighs or breasts
    • 2 tbsp olive oil
    • 3 tbsp lemon juice
    • 3 garlic cloves, minced
    • 1 tsp dried oregano
    • 1 tsp dried dill
    • 1 tsp salt
    • ½ tsp black pepper
  • Rice & Cooking Base

    • 1 tbsp olive oil (for cooking)
    • 1 cup long-grain rice
    • 2 cups chicken broth
    • 1 tsp lemon zest
    • 2 garlic cloves, minced

 

  • Garnishes & Optional Additions

    • 2 tbsp chopped parsley
    • ¼ cup crumbled feta cheese (optional)
    • ¼ cup kalamata olives (optional)

Instructions

  • Marinate the Chicken

    • In a bowl, mix olive oil, lemon juice, minced garlic, oregano, dill, salt, and pepper.
    • Add chicken and coat evenly. Marinate for at least 30 minutes or overnight.
  • Sear the Chicken

    • Heat olive oil in a large skillet or Dutch oven over medium-high heat.
    • Sear the chicken for 3-4 minutes per side until golden brown. Remove and set aside.
  • Prepare the Rice

    • In the same pan, add more olive oil if needed and sauté minced garlic until fragrant.
    • Stir in the rice and toast for 2 minutes.
  • Simmer with Broth

    • Pour in the chicken broth and lemon zest. Stir well.
    • Place the seared chicken on top of the rice.
  • Cook Until Tender

    • Cover and simmer on low for 20-25 minutes until the rice is cooked and liquid is absorbed.
  • Rest & Garnish

    • Remove from heat and let it sit, covered, for 5 minutes.
    • Fluff the rice and garnish with parsley, feta, and olives if desired.

 

  • Serve Warm

    • Plate the chicken over the rice and enjoy!
