- 1 red onion, cut into chunks
- 1 bell pepper (optional), cut into chunks
- 4 pita breads
- 1 cup tzatziki sauce
- 1/2 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup feta cheese (optional), crumbled
- 2 tbsp fresh parsley, chopped
- Wooden or metal skewers
Instructions
- Prepare the Marinade: In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and black pepper.
- Marinate the Chicken: Toss the chicken pieces in the marinade. Cover and refrigerate for at least 30 minutes, preferably a few hours.
- Assemble the Skewers: Thread the marinated chicken onto skewers, alternating with onion and bell pepper chunks if using.
- Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Cook the skewers for 10-12 minutes, turning occasionally, until fully cooked.
- Warm the Pita: While grilling, warm the pita bread on the grill or in a pan.
- Prepare the Toppings: Dice cucumber, tomatoes, and parsley. Crumble feta if using.
- Assemble and Serve: Serve chicken skewers with warm pita, fresh veggies, tzatziki, and feta. Alternatively, remove chicken from skewers and make a pita wrap.
