- 1/2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper

For the Tzatziki Sauce:
- 1 cup Greek yogurt
- 1/2 cucumber, grated and moisture squeezed out
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh mint, chopped
- 1 garlic clove, minced
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1/2 tsp salt
Instructions
Preparing the Chicken Skewers:
- Cut chicken into bite-sized cubes and place in a large mixing bowl.
- In a separate bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and black pepper.
- Pour marinade over chicken and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours for best results).
- If using wooden skewers, soak them in water for at least 30 minutes.
- Thread marinated chicken pieces onto skewers, leaving small gaps for even cooking.
- Preheat grill to medium-high heat and lightly oil the grates.
- Grill skewers for 10-12 minutes, turning occasionally, until chicken is fully cooked and slightly charred.
- Remove skewers from grill and let rest for a few minutes before serving.
Preparing the Tzatziki Sauce:
- Grate cucumber and squeeze out excess moisture with a clean towel.
- In a bowl, combine Greek yogurt, cucumber, minced garlic, dill, mint, lemon juice, olive oil, and salt.
- Stir well and refrigerate for at least 30 minutes before serving.
- Serve chilled alongside the chicken skewers.
