Instructions

Preparing the Chicken Skewers:

  1. Cut chicken into bite-sized cubes and place in a large mixing bowl.
  2. In a separate bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and black pepper.
  3. Pour marinade over chicken and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours for best results).
  4. If using wooden skewers, soak them in water for at least 30 minutes.
  5. Thread marinated chicken pieces onto skewers, leaving small gaps for even cooking.
  6. Preheat grill to medium-high heat and lightly oil the grates.
  7. Grill skewers for 10-12 minutes, turning occasionally, until chicken is fully cooked and slightly charred.
  8. Remove skewers from grill and let rest for a few minutes before serving.

Preparing the Tzatziki Sauce:

  1. Grate cucumber and squeeze out excess moisture with a clean towel.
  2. In a bowl, combine Greek yogurt, cucumber, minced garlic, dill, mint, lemon juice, olive oil, and salt.
