- 1 zucchini, sliced
- 2 bell peppers, sliced

- 1 cup mushrooms, sliced

- 1 cup spinach or mixed greens
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1/2 cup feta or goat cheese (optional)
- 1/2 cup hummus or Greek yogurt-based dressing
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Prepare the Vegetables: Wash and slice the zucchini, bell peppers, red onion, and mushrooms. Shred the carrots.
- Season and Grill: Toss the vegetables with olive oil, garlic, lemon juice, salt, and pepper. Grill on medium-high heat for 3-5 minutes per side until slightly charred and tender.
- Warm the Tortillas: Heat tortillas on a dry skillet or grill for 15-20 seconds per side.
- Assemble the Wraps: Spread hummus or Greek yogurt dressing on each tortilla. Add grilled vegetables and fresh spinach.
- Add Cheese (Optional): Sprinkle feta or goat cheese over the vegetables.
- Wrap and Serve: Fold in the sides and roll tightly. Slice in half and serve.
