  • Total Time: 30 minutes
  • Yield: 4-6 servings 1x

Description

Ground Beef Stroganoff is a creamy, comforting dish perfect for busy weeknights. Made with tender ground beef, mushrooms, and a rich sour cream sauce, it’s an easy and budget-friendly take on the classic recipe. Serve it over egg noodles, rice, or mashed potatoes for a satisfying meal the whole family will love.

Ingredients

Scale
  • 1 lb ground beef
  • 2 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tbsp flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 cup sour cream
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 12 oz egg noodles (or preferred accompaniment)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Noodles: If using egg noodles, cook according to package instructions. Drain and set aside.
  2. Brown the Beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess fat and set aside.
  3. Sauté Aromatics: In the same skillet, melt butter and sauté onion until softened. Add garlic and mushrooms, cooking until mushrooms are tender.
  4. Prepare the Sauce: Sprinkle flour over the mushroom mixture, stirring continuously. Gradually pour in beef broth, stirring to prevent lumps.
  5. Add Seasonings: Mix in Worcestershire sauce, Dijon mustard, salt, black pepper, and paprika. Simmer until thickened.
  6. Combine with Beef: Return cooked beef to the skillet and stir to combine.
  7. Finish with Sour Cream: Reduce heat to low and stir in sour cream. Heat through without boiling.
  8. Serve: Spoon over egg noodles or preferred base. Garnish with fresh parsley.

Notes

  • Substitutions: Use ground turkey or chicken for a lighter option. Replace sour cream with Greek yogurt or heavy cream.
  • Gluten-Free: Use cornstarch instead of flour and serve over gluten-free pasta or rice.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Freeze the sauce (without noodles) for up to 3 months.
  • Reheating: Warm on the stove over low heat with a splash of beef broth or microwave in short intervals, stirring in between.
